How is that done? I did it 2 man, my son pumping the brake pedal and me opening/closing the bleed nipple.

The latest kits pressurise the brake fluid via an adapter on the reservoir. I think most garages do it this way now.

I had a problem bleeding the rears on my MK2 until it was done this way

Kits like that have been on the go for years, I had a Gunsons one that uses the spare tyre pressure 20 years ago, you also get vacuum bleeders that use vacuum to pull fluid through.
All these methods have their pros & cons, my point being the handbrake mechanism is purely mechanical and makes no difference to the bleeding.
I replaced all my calipers a couple of years ago and bled my brakes using a spanner, tube, jar and assistant, no problems and the brakes are excellent.

Are there any major cons to doing it the old fashion two-man way?

Should I just re bleed all brakes again from the back?

No, if you look in the BGB (the Toyota Workshop Manual) that is the method they describe ;)

If you pump the pedal does it pump up and get hard?
If so there's probably still air in the system, I'd bleed them again. Once the new clean fluid is coming through your bleed pipe into a clean container you can reuse it, just let it stand for a bit to let any air settle out. Preferably put a lid on the container to keep any dirt/moisture out

It does get a little bit harder but not much. If I leave it for a few seconds and press again it goes back down to the floor.

same as mine did and bleeding fixed it, the garage were cursing it though saying they put many litres of brake fluid through
Not Plan B again!! Why don't we just go with plan B in the first place?
